Com has made from young glutinous rice (around 100 day old). After being harvested, the rice is grilled, cooled and poured into a stone mill, pounded lightly and winnowed. The final product which is soft, sweet and fragrant is then carefully wrapped in lotus leaves to allow the rice to absorb lotus aroma and the emerald color.
Com can be found throughout Hanoi but if you want to try the best Com in the country, Vong village, 6km from Hanoi to the west, is a must visit. This village has been famous for making Com with the best taste which makes its specialty a chosen tribute to the King before. The history of Vong village’s Com began a long while ago, when the whole village had to face to a serious famine, leaving them no choice but to harvest the rice earlier than usual. They roasted some of the rice to preserve but out of their expectation, the roasted young rice taste delicious. They have started making this kind of rice since then as a tradition every year and name it as Com.
